Well, another weekend is coming to an end. My guests headed back to the East coast earlier today, and I was just glued to my TV watching HBO's True Blood, so it's a pretty typical Sunday night for me just relaxing with Harley! Before planting myself on my couch, I perused my kitchen for a snack. I was in the mood for something sweet but light, and found 3 almost overripe apricots sitting in the back of my fridge. I love apricots because they're these little, sweet fruits that you can eat in a few bites, yet they add some flavor to yogurt, cottage cheese, or salads, or are yummy to eat on their own as mini snacks. Balsamic Portobello & Goat Cheese Panini
I think I've found a new favorite way to eat portobello mushrooms: As soon as I whipped up this panini, before I even tasted it, I knew I'd love it. I definitely will be making this deliciousness again very soon! Balsamic Portobello & Goat Cheese Panini Serves 2 Ingredients: 2 panini rolls (Trader Joe's) 2 large portobello mushroom caps 2 vine ripe tomatoes, sliced 2 oz creamy goat cheese 1/2 c balsamic vinegar 1 TBSP light brown sugar 1/2 TBSP soy sauce 1/4 onion 1 TSP olive oil Sea salt In a large saucepan, bring the balsamic vinegar, light brown sugar, and soy sauce to a boil. Finding the Motivation to Workout
Last night I celebrated the 4th of July in San Diego's Gaslamp District with my brother Danny and his girlfriend Desiree, who as I previously mentioned, are in town for the week: The combination of booze + little sleep left me feeling sluggish and sleepy today. Going to bed at 4 am when you need to get up the next morning and get work done isn't ideal (well, duh), but it was worth it! I have to admit, I'm pretty good with being diligent about my workouts, as I make it a top priority to get a sweat session in most days. Homemade Pizza Night: The Classic Margherita
Happy (almost) 4th of July! Last night I took my San Diego visitors, my brother Danny and his girlfriend Desiree, to The Shout House, a piano bar downtown. It is so much fun there! I've played the piano since I was a little kid, so I feel like I appreciate the pianists and how talented they are even more so than the average person. It was trivia night and they had an America themed round, of which I can only recall one question... Who was the only man to actually sign the Declaration of Independence on the 4th of July? Skinny Penne A La Vodka
There's nothing like starting off my day with a good sweat session. I began my Sunday by going for a nice hike with Harley, and it was a perfect morning outside. Good cardio + a sleepy puppy before 10 am = awesomeness! Dinner I printed out a recipe for low-calorie penne a la vodka from the Shape magazine website a few months ago, and was waiting until I had a yen for pasta to try it out. Last night I was in a pasta mood, and when I got a whiff of my fragrant basil plant, wanted to use some for my dinner. I made a few changes to their recipe , such as nixing the pine nuts and adding spinach to the mix to add some veggie vitamins.
