Thus far, I've spent the bulk of my day running some errands, one of which was a stop at the pet store to pick Harley up some new doggie food. I haven't bought her toys much lately because of her crazy enthusiasm to rip them to pieces as quickly as possible. But once in awhile, I pick something new up to supplement her basket of (half eaten) toys. After all, I work from home and these babies keep her busy and (somewhat) out of my hair all day long! Stacked Apple, Goat Cheese & Pecan Salad
Earlier I felt like creating a healthy meal that looked fun & fancy, and this is what I came up with - isn't it pretty?! Stacked Apple, Goat Cheese & Pecan Salad What you need: 1 apple 1 oz goat cheese 2 TBSP chopped pecans, toasted 6 pitted dates, sliced 1 celery stalk 1/2 TBSP honey 1/2 TBSP apple cider vinegar 1 TSP lemon juice sea salt Thinly slice the apple and celery stalk. Begin to form layers - first placing the apple, then topping it with some goat cheese, pecans, dates, and celery slices. Do this until you start to feel like you're playing Jenga, the salad edition (ha!), then decorate the sides of the apple tower with some of each ingredient. Dog Beach Date + A New Biking PR
Love this quote. Speaking of moving, today I hit a new biking PR. Let's get one thing straight, I'm no avid cyclist. I think mountain biking is a lot of fun, but most of the cycling I do is on a stationary bike at my gym to get the cardio portion of my workout in. I've mentioned in previous posts that recently we got new, more high tech bikes, and I'm having fun setting distance goals when I do longer rides. I began alternating the resistance every other mile, keeping my heart rate between 60-65% for a mile, then upping the level to bike at 70-80% of my max heart rate for a mile. At first, I just wanted to get to 15 miles. Then it became 20. Next I hit 25. And today, I went past that to 26.2. Happy Wednesday! Guess what finally came in the mail today? The present I got myself after 4 months of Adam being deployed! This gets me psyched for football season to start back up... Being that I leave the beginning of next week to spend time on the East coast with my family and girlfriends, I'm starting to get into that weird phase where I'm running out of staples in my kitchen and want to eat up all my perishable foods so I don't have to toss them. I’m All About the Produce
Growing up a vegetarian, I've always eaten a lot of fruits and veggies, but recently, I decided to be even more conscious of what I'm eating on a daily basis. I made it a rule to make sure to eat at least one fruit or veggie every time I ate. The exception to this is snacks, as I'll have a protein bar, dessert, or other nosh that sometimes won't involve any produce. I'm constantly throwing a piece of fruit into or on the side of everything and anything, and I definitely feel like incorporating as much produce as I can to my meals fills me up more and provides me with an ample amount of vitamins and antioxidants. In other words, I reward myself for getting through another month without having a complete emotional breakdown! When he's gone, I try to just take it day by day and not think too much of how much more we have to go. But, once we get to this point, I envision the deployment as a mountain we've been climbing up, and feel good in thinking that it's all a downhill slope from here.
