Today I had to report to jury duty for the first time ever. I was surprised when I actually got called out of the hundreds of people there to be in the selection process, or as my hubby told me last night as he was trying to school me with his criminal justice degree knowledge, participate in voir dire. I wound up not having to be on the jury, though once I got into the courtroom, I found the whole process pretty interesting and was intrigued to know more details of the case. But my civic duty is complete for now! After being gone all day, I knew my spoiled puppy would be a ball of energy. Sweet & Sour Pineapple and Red Bell Pepper
Do you know what today is? I just noticed on my calendar that it's National Teacher Day. Hope it was a good day for all the amazing teachers out there, my best friend being one of them (love you Meg!!)! Last week I recapped everything I had eaten one day (here). Treadmill Incline Workout
At the gym earlier, I hopped onto the treadmill to do a short incline routine after biking 10 miles and doing some strength training. The 20-minute workout below had my booty rockin'! Don't let the slower pace fool you - the incline really gets ya. Your butt and hamstrings will especially feel the burn if you pair this workout with strength training leg moves as I did. And now for my random thought of the day.. You know how people sometimes say 'It's the little things in life'? Well, I couldn't agree more with that statement. Skinny Strawberry Daiquiri
After spending the afternoon having lunch on the beach with some fellow marine wives and sipping a glass of wine, I was in the mood to enjoy an alcoholic beverage last night. I tend to not make myself a drink when I'm home alone (hence, I consume a lot less alcohol when Adam is away!), but last night while watching boxing, I decided to come up with a new concoction - a better for you, yet just as tasty strawberry daiquiri. Something about boxing and a fruity daiquiri seems to not fit together.. oh but how I enjoyed it! This drink has about 150 calories, makes a nice big glass, and will definitely be a repeat in my house. It's obviously always great to have days where everything feels like it's going my way, but it's especially nice on a day when I'm already celebrating my awesomeness. And why am I doing that? Happy Birthday Dad! + Chickpea & Date Tagine
First thing's first... Happy Birthday to my wonderful dad!! I love you and can't wait to see you soon! :) Dinner Moving onto food, for tonight's dinner I tried a new recipe out from Vegetarian Times. Up until seeing this recipe, I had never heard of a tagine before. Assuming I'm not the only one, here's a quick explanation: A tagine is a North African (Moroccan to be exact) dish that is named after the type of pot it is cooked in - one that is formed entirely out of clay.
