Do you know what today is? I just noticed on my calendar that it’s National Teacher Day. Hope it was a good day for all the amazing teachers out there, my best friend being one of them (love you Meg!!)!
Last week I recapped everything I had eaten one day (here). As I mentioned then, I think it’s a good way to show what a vegetarian diet could look like to people, whether they’re veg-curious, or just looking for different meal ideas or to eat healthier – whatever the case may be. With that said, here is a look at my eats today:
Breakfast: lemon Chobani Greek yogurt + blueberries
Lunch: sweet & sour pineapple and peppers with brown rice
After cutting up a pineapple a few days ago, I was thinking about what I could do with it besides eating it plain as usual. I decided to roast it with some bell pepper and onion, drizzled with sesame oil and a touch of brown sugar – hence, an easy sweet and sour side dish was born. I loved it mixed into a serving of brown rice.
Sweet & Sour Roasted Pineapple and Red Bell Pepper
Makes 2 servings
What you need:
- 2 c of fresh pineapple, cut into bite sized chunks
- 1 red bell pepper, thinly sliced
- A small chunk of onion, thinly sliced
- 2 TSP sesame oil
- 1 TSP light brown sugar
- 1 TSP lime juice
- salt & pepper
Preheat oven to 400. Arrange pineapple, pepper, and onion on a baking sheet, then sprinkle brown sugar on top, drizzle with oil, and season with salt and pepper.
Roast the mixture in the oven until lightly browned. I left mine in there for about half an hour. Once it’s done, drizzle with lime juice.
Stats: 150 calories, 30 g carbs, 5 g fat, 2 g protein
Pre-Workout Snack: an apricot, almonds, some cherries, and a protein drink (1/2 scoop Designer Whey chocolate protein powder + 1 c Soy Slender chocolate soy milk)
Dinner: a whole wheat wrap stuffed with tofu, beans, tomato, and light shredded cheese
Snack: a homemade nutrigrain bar + raspberries
I made these bars last night and they taste so yummy, but they didn’t stick together enough (these are only the ones I managed to cut into pieces). Must do more trial & error before posting the recipe!
I had never seen yellow raspberries before last weekend at the farmer’s market. They pretty much taste the same as red ones, maybe just a little less sweet:
Well, I’m off to go watch the season finale of The Voice. They had some amazinggg singers on the show this season and I’m not sure who I think should win it!
