“There are exactly as many special occasions in life as we choose to celebrate.” – Robert Brault
From the moment I woke up today, my Friday has been all kinds of fabulous – work-wise, exercise-wise, weather-wise, and so on. It’s obviously always great to have days where everything feels like it’s going my way, but it’s especially nice on a day when I’m already celebrating my awesomeness. And why am I doing that?
Because today is 4 months since my husband left on a deployment. FOUR MONTHS down, a few to go, and I’m still trucking along. I happen to think that is cause to pat myself on the back!
Every month that has passed in this deployment, I have in some way done a little something special. After all, I deserve it right? 😉  Last month, I devoted an entire Saturday to all things amazing and got a massage, bought pretty flowers, ate pancakes for dinner, went to the beach at sunset, and more. This month, I made a few purchases on things I’ve been wanting to get for awhile but haven’t felt like spending the mula on. Oh, and pancakes were involved in my celebration again. I think there’s a pattern developing here!
Being a big New York Giants fan, I’ve been wanting to get a new jersey for awhile now. It seems like everytime I get one, the player winds up leaving the next season, and the only current player’s jersey I own is Eli Manning’s. It’s a kid’s jersey since women’s are hard to come by, so it’s not my favorite fit. Earlier I ordered a women’s jersey of defensive end Jason Pierre-Paul  (and I first made sure to check that he’s signed with the Giants for at least a few more seasons!):
Can’t wait to get it (and for football season in general!)!
I also bought things to spruce up my patio today. It’s pretty plain Jane and I have total patio envy of other people in my complex who have really cool setups. My patio is little, but I’m going to work with what I got and make it cute. More on that to come later in the weekend once I’ve put everything up!
For lunch today, I whipped up a new pancake recipe that I loved and will absolutely make again very soon:
Yogurt Protein Pancakes
- 1/4 c Chobani vanilla Greek yogurt
- 1/4 c whole wheat flour
- 1/2 c vanilla soy milk
- 1/2 banana, mashed
- 1/2 scoop vanilla protein powder (Designer Whey)
- Dash of salt
Mix everything together in a bowl, then pour batter onto pan and cook until browned on each side. Eat with your favorite toppings – as you can see, I had mine with strawberries and it was delish!

Now I’m off to relax for the rest of the night. May you have a weekend full of fabulousness, and don’t forget to give yourself credit for your accomplishments! Acknowledge them, celebrate them – no matter how big or small they may be.
[…] Pancakes – If you’re thinking that pancakes are heavy and unhealthy for you, think again, because they certainly don’t have to be. I love experimenting with batter recipes to come up with yummy and balanced morning meals. Try my pumpkin pancakes or yogurt protein pancakes! […]
