Happy Easter to all those who celebrate! I would have been enjoying some family time if I were in Jersey today, but since I'm not, I pretty much had a regular Sunday. I received some pics in recognition of the holiday from family members, including shots of my grandmother's pet bunnies and of my munchkin of a nephew wearing rabbit ears: I can't even deal with the bunny ears. I came across the following Apache blessing, and wanted to share these words of wisdom to remember as the weekend comes to a close and yet another week begins: May you have a wonderful week! ... Today, I celebrate.
Right now, I'm at the halfway point of my Marine's deployment. To celebrate making it thus far without having an emotional meltdown, I decided earlier in the week that today would be a day of pure indulgences. I think that I enjoy life a good deal, but an entire day devoted to only doing things I absolutely love (well, within reason... I still picked up Harley's poop and obeyed traffic laws. Ok ok, most traffic laws.)? No work tasks, no errands, no cleaning, nothing that I do just because I feel like I have to? Yes please! Putting my plan into action, here is what my day looked like: After sleeping in a bit, I had a date with my friend Jackie to go to the Little Italy Mercato, aka our new Saturday morning ritual whenever we can. It just so happened to have been gorgeous outside today, ... [Read More]
Zucchini ”Pasta” & Chocolate Peanut Butter Cups
[Blog Update: I've created a Foodie Meets Fitness Twitter account. There's now a "Follow me" button on the sidebar here! Also, I just updated my recipe page.] Earlier, I had a pretty good headache. It probably had something to do with my day's happenings: after a night of tossing and turning, my super early wake-up call from my bank notifying me of fraudulent activity on my account once again (thanks, asshole!), concentrating a little too hard at my laptop screen and confusing the heck out of myself working on a project, and getting my taxes done this afternoon (woohoo, check that off my to-do list!). The solution to get my head feeling better and to kick off my 3-day weekend right? Firstly, forgoing the gym to instead go for an hour hike with Harley at the park. The fresh air felt ... [Read More]
Puppies & Calendar Quotes
Get a load of these pretty little faces.. I got to hang with these 5 month old babies a bit ago while volunteering at the SD Humane Society. I was taking the harness off of another dog I walked tonight when he looked at me and licked me right in the mouth. Gross! Oh but such a love.. Speaking of adorable homeless animals, I got word today that the Escondido Humane Society, the town north of San Diego, and where I used to also volunteer, is in the runnings to win $100K in the ASPCA Rachael Ray Challenge. I can tell you that the dedicated staff and volunteers there could really use the money to help all of the animals that they so lovingly try to care for. What can you do to help them win? Starting tomorrow at 9 PST, just go to this website www.votetosavelives.org and vote for Escondido ... [Read More]
Spaghetti Squash Casserole
Tonight I had a Skype date with 2 of my lovely girlfriends... We had some technical difficulties, but still, chatting with my college roommates Meaghan and Marla is always great! Meg might look familiar because I posted pictures when she visited me in February. Here's a photo that exemplifies pretty well the fun times we've had together: I love my friends. Moving onto food, tonight's dinner was a veggie-packed one, and one of my hubby's favorite meals. In fact, when he came home from his last deployment and I asked what he'd like me to cook the most, he chose my spaghetti squash casserole. I concocted this dish when I first started playing around with cooking spaghetti squash, and I don't think I've made it any other way since because we like it so much! I found the ... [Read More]
Either You Do it, or You Don’t.
Ever have one of those evenings where you're just not feeling dinner? No "dinner" food sounded appealing to me tonight, and I wanted something cold, so I made a new yummy smoothie combo. Post-workout, this smoothie is great because it packs a good amount of protein, 2 servings of fruit, and fulfills the following amounts of daily vitamin recommendations: 15% Vitamin A, 115% of Vitamin C, 72% Calcium, and 13% iron. Not too shabby! Strawberry Banana Smoothie 1 6-oz Chobani strawberry banana yogurt 1/2 frozen or fresh banana 1 cup frozen strawberries 1 cup (unsweetened) almond milk 1/2 scoop vanilla protein powder (Designer Whey) Stats: 350 calories, 8 g fat, 26 g protein, 49 g carbs [Side note: my new favorite Chobani yogurt is definitely their strawberry banana ...
