I'm always ripping pages out of magazines when I spot a recipe I'd like to try. Sometimes I get to cookin' right away, other times I throw the page in my 'recipes to try' pile and it disappears for months (or still has yet to be made...). This recipe was somewhere in between, as I saw it in Self magazine last month and made it for dinner last night. I changed a few of the ingredients based on what I had in my kitchen and reduced the portion size (original recipe can be found here). Doggie Mania
Today I watched a video about the tallest dog in the world, a 230-pound, 7 ft+ long Great Dane named George. OMG, how cool is he?! This put me in total dog mode, and I started looking through pictures of Harley. I found one from the day we met her twin at the dog park: We rescued Harley when she was a puppy and aren't positive what breed(s) she is, but after meeting this look-a-like who acted exactly like her and was an American Dingo, I'm completely convinced that she has to be at least part dingo. (Super Healthy!) Quinoa Lettuce Wraps
Anyone else find this hilarious? I do have a Pinterest account, but fortunately, I definitely don't spend more time on it than I do working out! Onto food... On Tuesday night I ate dinner at a Japanese restaurant. This must have put me in an Asian food kind of mood, because I found myself thinking about lettuce wraps yesterday. Peach & Apple Crumble
Ever since I made and devoured chocolate peanut butter cups last week (thankfully I didn't eat them all, since my friend happily took a few off my hands!), I've been wanting to try out another recipe from The Kind Diet. A peach crumble caught my eye, but when I figured out that 1 serving packed 900+ calories, I was reluctant to make it. Not to sound fanatical, but that seems like way too many calories for one serving of an oats & fruit dessert (though I think this could be a breakfast treat as well!). So, instead of passing up trying it out, I decided to halve the topping ingredient amounts, which in turn, nearly slashed the calorie (and fat) content in half. Life can be full of excuses, especially when it comes to living a healthy lifestyle. Sometimes it's difficult to find the time and energy to work out or the willpower to eat well. We all know people who are constantly making excuses for themselves when it comes to these things. The fact of the matter is that we're only human, and life can get hectic. Fancy Pants Lunch: Fennel, Apple, & Feta Salad
Ok, perhaps this salad really isn't fancy at all. But to someone whose lunches usually consist of a smoothie or yogurt with fruit, consumed while plugging away at a work project, it felt like it to me. Taking the few minutes to chop up fruits and veggies and then sitting at my kitchen table to eat in the middle of a weekday is a rare occurrence, but today I did just that. Combining licorice-like fennel, salty feta cheese, tart apple, sweet figs, and just a hint of crunchy pecans, this salad packs a lot of tasty flavors.
