Today marks one year since my husband and I adopted Harley, our adorable, handful of a puppy who manages to make me laugh (and misbehaves!) every single day. Any dog owner would probably agree that our pups teach us much about life. In reflecting on this past year with her, I got to thinking about all of the lessons she reminds me of quite often: Live Each Day to the Fullest Every morning, Harley wakes up excited about life, rolling over to get a belly rub as her tail wags. She makes it hard for me to not be happy to see her and start my day. Nutty Veggie Quinoa
If that's true, then my fat cried a river this evening! My boxing class had me literally dripping sweat. It was totally gross, yet awesome! This afternoon I realized that while my diet yesterday included a bunch of fruit, the only veggie I had eaten was a few tablespoons of hummus. I decided to quickly remedy my lack of veggie intake and throw together a lunch using the zucchini and bell pepper I had on hand. The pine nuts add a bit of crunch to the dish, and the parmesan really gives plain quinoa a lot of flavor. Peach & Granola Waffles + Active Rest Day Love
Oh, how I enjoy being in the sunshine! Today the weather was absolute perfection in San Diego and I got to soak some of it up by the pool this afternoon. For lunch today, I created a waffle recipe worth sharing: Peach & Granola Waffle 1/4 cup whole wheat all purpose flour 1/2 peach Greek yogurt (3 oz) 1/4 cup unsweetened almond milk 1 TSP brown sugar 3/4 cup sliced frozen peaches, either thawed out or warmed in the microwave (or fresh!) 1 TBSP wheat germ 1/4 cup granola (I used Back to Nature honey almond flaxseed) A sprinkle of stevia sweetener, optional Simply mix up flour, yogurt, milk, sugar, and wheat germ in a bowl while your waffle maker is heating up. Harley had a blast today digging in some holes and running around like a lunatic during our dog park trip earlier. 20 minutes of acting like the happiest puppy on earth and she was passed out by my feet for the rest of the afternoon. Yes! Speaking of dogs, I've reached the conclusion that I'm an animal magnet. Yesterday as I was walking to the gym, a really sweet Pomeranian ran up to me. Under all his fluff, I found a collar - which read "Nacho - I lick a lot" - HA! When the owner didn't answer her phone and Nacho darted across the street, I knew he would have to come with me to the gym until I found his mama. Peanut Butter Lovers Rejoice
Did you know that today is National Peanut Butter Lover's Day? I am a huge peanut butter fan. My favorite ways to eat it are with apple or banana, in a good ole PB&J sandwich...and possibly straight out of the jar on occasion. Don't even get me started on my love for peanut butter ice cream. I obviously had to celebrate the occasion by eating some PB today. My favorite new kind is from a local company called Pacific Beach Peanut Butter. The owner has a stand at the farmer's market and I don't pass him without trying a sample :) The jar I own at the moment is caramel flavored. To. die. for.
